Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup maraschino cherry juice
- 2 tbsp lime juice
- 1 tsp lime zest
- 1/2 tsp almond extract
- 1/2 cup maraschino cherries, chopped
- Green food coloring optional
- For the frosting:
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup maraschino cherry juice
- 1 tbsp lime juice
- 1 tsp lime zest
- Maraschino cherries and lime slices for garnish
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a cupcake tin
Whisk the flour, baking powder, and salt together in a bowl
Put away
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
One egg at a time, making sure to mix well after each addition
The lime zest, lime juice, and maraschino cherry juice should all be mixed in
Slowly add the dry ingredients to the wet ingredients, mixing them in with the milk every other time
Start with the dry ingredients and end with the milk
Dont mix any further than that
You can get the color you want for your cupcakes by adding a few drops of green food coloring
Mix the chopped maraschino cherries in slowly
Fill each cupcake liner about two thirds of the way to the top with batter
Its done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking
Mix the softened butter, maraschino cherry juice, lime juice, and lime zest together in a bowl until smooth
Let the frosting cool while the cupcakes do
Add the powdered sugar little by little until the frosting is smooth and creamy
Cover the cupcakes with the cherry-lime frosting once they are completely cool
Add lime slices and maraschino cherries as a garnish
