Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup vegan butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water flax egg
- 1 teaspoon vanilla extract
- 1/2 cup raisins
Instructions:
Preheat oven to 350F 175C
Line two baking sheets with parchment paper
In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt
In a separate large bowl, cream together vegan butter, brown sugar, and granulated sugar until smooth and creamy
Mix in flaxseed mixture and vanilla extract until well combined
Gradually add dry ingredients to wet ingredients, stirring until a dough forms
Fold in raisins until evenly distributed throughout the dough
Using a tablespoon or cookie scoop, drop rounded dough onto prepared baking sheets, spacing them about 2 inches apart
Flatten each dough ball slightly with the palm of your hand
Bake for 10-12 minutes, or until the edges are golden brown
Remove from oven and let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely
Once cookies are completely cooled, spread a dollop of vegan frosting or dairy-free cream cheese frosting on the bottom side of one cookie, then sandwich with another cookie, bottom side down
Repeat with remaining cookies to make sandwich cookies
