Ingredients:
- 2 cups of thinly sliced watermelon radish
- 1 cup of julienned carrots
- 1/2 cup of sliced cucumber
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh mint leaves
- 1/4 cup of chopped roasted peanuts
- 1/4 cup of thinly sliced red onion
- 1/4 cup of rice vinegar
- 2 tablespoons of soy sauce
- 1 tablespoon of honey
- 1 tablespoon of sesame oil
- 1 teaspoon of grated fresh ginger
- 1 clove of minced garlic
- Salt and pepper to taste
Instructions:
In a large bowl, combine the watermelon radish, carrots, cucumber, cilantro, mint, roasted peanuts, and red onion
In a separate small bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, grated ginger, minced garlic, salt, and pepper to make the dressing
Pour the dressing over the salad ingredients in the large bowl and toss to combine
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld
Serve the Asian Watermelon Radish Salad cold and garnish with extra mint leaves, cilantro, and peanuts if desired
