A delicious and aromatic Thai-inspired turkey soup with a perfect blend of spices, coconut milk, and fresh vegetables.
Ingredients:
- 1 lb ground turkey
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, diced
- 4 cups chicken broth
- 1 can 14 oz coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp ginger, grated
- 1 cup mushrooms, sliced
- 2 green onions, chopped
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions:
In a large pot, cook ground turkey over medium heat until browned
Add chopped onion and minced garlic, cook until onions are translucent
Stir in red curry paste, fish sauce, soy sauce, and grated ginger
Add sliced bell pepper, julienned carrot, diced zucchini, and sliced mushrooms
Pour in chicken broth and coconut milk, bring to a simmer
Let the soup simmer for 15-20 minutes, allowing flavors to meld
Finish by adding lime juice and chopped green onions
Serve hot, garnished with fresh cilantro
