Ingredients:
- 1/2 cup popcorn kernels
- 1 cup cashews, roughly chopped
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions:
Preheat oven to 250F 120C
Pop popcorn kernels using preferred method and transfer to a large mixing bowl
Add chopped cashews and set aside
In a saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt
Stir occasionally until mixture comes to a boil
Let boil without stirring for 4-5 minutes
Remove from heat and stir in baking soda and vanilla extract until well combined
Pour caramel mixture over popcorn and cashews, stirring quickly to coat evenly
Spread popcorn mixture onto a baking sheet lined with parchment paper
Bake in preheated oven for 45-55 minutes, stirring every 15 minutes, until popcorn is crispy and caramelized
Remove from oven and let cool completely before breaking into clusters
