This gluten-free mushroom walnut taco meat is a delicious and satisfying alternative to traditional meat-based taco fillings. Ingredients:

  • 2 cups walnuts, finely chopped
  • 2 cups mushrooms, finely chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • 2 tablespoons gluten-free soy sauce or tamari
  • 2 tablespoons water
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions:

Warm up a big pan with olive oil over medium-low heat

Put in the garlic and onion, and cook for about two minutes, until the onions are soft

Add the mushrooms and chopped walnuts

Cook for about 5 to 7 minutes, until the mushrooms are browned and slightly crispy

Pepper, salt, and chili powder should all be mixed in

Put in water, gluten-free soy sauce or tamari, and tomato sauce

For another two to three minutes, until everything is hot and the flavors are well mixed

Add chopped cilantro as a garnish before serving
