Ingredients:
- 1 whole prime rib roast about 8-10 pounds
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and black pepper to taste
- Wood chips for smoking hickory or oak recommended
Instructions:
Set the smokers temperature to 225F 107C
To make a rub, combine olive oil, minced garlic, thyme, rosemary, salt, and black pepper in a small bowl
Evenly coat the entire prime rib roast with the prepared mixture by rubbing it in
While the smoker is still heating up, leave the prime rib to rest at room temperature for approximately half an hour
After filling the smoker box or foil pouch with wood chips, place it inside the smoker
When the smoker is ready, set the prime rib onto the grates and check the roasts thickest area with a meat thermometer
Smoke the prime rib until the internal temperature reaches the doneness you desire, which is typically medium-rare at 135 degrees Fahrenheit or 57 degrees Celsius
Depending on the size of the roast and the temperature of the smoker, this could take four to five hours
Before slicing, take the smoked prime rib out of the smoker and allow it to rest for 20 to 30 minutes
The smoked prime rib should be sliced and served with your preferred sides
