Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into chunks
- 1/4 cup olive oil
- Juice of 2 lemons
- Juice of 1 orange
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions:
To make the marinade, put olive oil, lemon juice, orange juice, oregano, paprika, salt, and pepper in a bowl and mix them together
Make sure the chicken chunks are well covered when you add them to the marinade
Put it in the fridge for at least two hours or overnight with the lid on
Warm up the grill over medium-high heat
Place chunks of chicken that have been marinated on soaked wooden skewers
For 10 to 12 minutes, turn the skewers every so often until the chicken is cooked all the way through and has a nice char
Serve hot with lemon wedges and fresh herbs on top
