Chocolate Mocha Torte

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup hot brewed coffee
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp instant coffee granules
  • 1/4 cup powdered sugar
  • 1/4 cup unsalted butter
  • 1/4 cup brewed coffee
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup chopped toasted hazelnuts

Instructions:

Start by heating the oven to 350F 175C

Butter and flour two round cake pans that are 9 inches in diameter

Mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a large bowl

Buttermilk, eggs, vegetable oil, and vanilla extract should all be added

Beat at a medium speed until everything is well mixed

It will be smooth after you add the hot coffee

It is going to be thin, but thats okay

Spread the batter out evenly in the pans that have been prepared

Bake in a hot oven for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean

The cakes should cool in the pans for 10 minutes

After that, they should be taken out and put on a wire rack to cool completely

Put 1/2 cup of heavy cream and instant coffee granules in a small saucepan

Stir the mixture over low heat until the coffee grounds are gone

Take it off the heat and mix in 1/2 cup of chocolate chips until its smooth

Soak it up and let it cool down

Powdered sugar, unsalted butter, and 1/4 cup of brewed coffee should be mixed together in a different bowl until the mixture is smooth and creamy

Spread the coffee-flavored frosting on one of the cake layers that has been left to cool

Spread the chocolate ganache all over the top and sides of the cake after putting the second cake layer on top

Put toasted hazelnuts that have been chopped on top of the ganache

To let the ganache set, put the cake in the fridge for at least 30 minutes before serving

Cut your Chocolate Mocha Torte into pieces and enjoy

These vegan oatmeal raisin sandwich cookies are a tasty treat that can be eaten as a snack or for dessert. They have sweet raisins inside and are soft and chewy. There are two oatmeal cookies in the middle.

Ingredients:

  • 1 cup rolled oats

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water flax egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Instructions:

Preheat oven to 350F 175C

Line two baking sheets with parchment paper

In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt

In a separate large bowl, cream together vegan butter, brown sugar, and granulated sugar until smooth and creamy

Mix in flaxseed mixture and vanilla extract until well combined

Gradually add dry ingredients to wet ingredients, stirring until a dough forms

Fold in raisins until evenly distributed throughout the dough

Using a tablespoon or cookie scoop, drop rounded dough onto prepared baking sheets, spacing them about 2 inches apart

Flatten each dough ball slightly with the palm of your hand

Bake for 10-12 minutes, or until the edges are golden brown

Remove from oven and let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely

Once cookies are completely cooled, spread a dollop of vegan frosting or dairy-free cream cheese frosting on the bottom side of one cookie, then sandwich with another cookie, bottom side down

Repeat with remaining cookies to make sandwich cookies

Soft Spongy Dosa

South Indian sweets like Soft Spongy Dosa are made from batter made of fermented rice and urad dal. A lot of people like this breakfast dish because its soft and spongy. It goes well with many kinds of chutneys and sambar.

Ingredients:

  • 1 cup rice
  • 1/4 cup urad dal split black gram
  • 1/4 cup poha flattened rice
  • 1/4 cup methi seeds fenugreek seeds
  • Salt to taste
  • Water as needed

Instructions:

Wash and soak the rice, urad dal, poha, and methi seeds in water for 4-6 hours

Drain the soaked ingredients and grind them into a smooth batter by adding water as needed

The batter should have a thick pouring consistency

Add salt to the batter and mix well

Allow it to ferment overnight or for 8-10 hours, until it doubles in volume

Heat a non-stick or cast-iron skillet tava over medium heat

Pour a ladleful of the dosa batter onto the hot skillet and spread it in a circular motion to form a thin dosa

Drizzle a little oil around the edges of the dosa and cook until the bottom turns golden brown and crisp

Flip the dosa and cook the other side for a minute or two until its lightly golden

Pumpkin Hummus with Cinnamon Sugared Pita Chips

This recipe is a great fall twist on regular hummus. It uses creamy pumpkin and warm spices like cinnamon and nutmeg. Its a great fall snack or appetizer when served with sweet and crunchy pita chips.

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup canned pumpkin puree
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 4 whole wheat pita breads, cut into wedges
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions:

Warm the oven up to 175F 350C

Put garlic, lemon juice, cumin, smoked paprika, salt, cinnamon, nutmeg, olive oil, and chickpeas in a food processor

Blend the ingredients until smooth

Mix until smooth

Place pita wedges on a baking sheet so they are all in one layer

Cocoa sugar, cinnamon, and nutmeg should be mixed together in a small bowl

Put on top of pita wedges

10 to 12 minutes in the oven, or until crispy

Pita chips dusted with cinnamon sugar go well with pumpkin hummus

  • Maraschino cherries and lime slices for garnish

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a cupcake tin

Whisk the flour, baking powder, and salt together in a bowl

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One egg at a time, making sure to mix well after each addition

The lime zest, lime juice, and maraschino cherry juice should all be mixed in

Slowly add the dry ingredients to the wet ingredients, mixing them in with the milk every other time

Start with the dry ingredients and end with the milk

Dont mix any further than that

You can get the color you want for your cupcakes by adding a few drops of green food coloring

Mix the chopped maraschino cherries in slowly

Fill each cupcake liner about two thirds of the way to the top with batter

Its done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking

Mix the softened butter, maraschino cherry juice, lime juice, and lime zest together in a bowl until smooth

Let the frosting cool while the cupcakes do

Add the powdered sugar little by little until the frosting is smooth and creamy

Cover the cupcakes with the cherry-lime frosting once they are completely cool

Add lime slices and maraschino cherries as a garnish

Serve your tasty Cherry Limeade Cupcakes and enjoy them

Instructions:

Warm up a grill or griddle on the stove over medium-high heat

Separate the ground beef into 4 equal parts and form them into thin patties

Add salt and pepper to both sides

The patties should be grilled for three to four minutes on each side, or until they are done the way you like them

Put a slice of American cheese on top of each patty in the last minute of cooking and cover to melt

While the patties are cooking, split the buns in half and toast them on the grill until they are just barely browned

To make the special sauce, mix mayonnaise, ketchup, and yellow mustard in a small bowl

Spread the special sauce on the bottom bun before putting the burgers together

Add a patty covered in cheese on top

After that, put down a layer of grilled onions, chopped dill pickles, and shred lettuce

Place the other half of the bun on top and serve right away
