Ingredients:
- 1 cup gluten-free all-purpose flour
- 1/4 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup vanilla pudding mix gluten-free
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk dairy or non-dairy
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C and grease a donut pan
In a mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, sugar, vanilla pudding mix, baking powder, and salt
In another bowl, combine the milk, vegetable oil, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until well combined
Transfer the batter into a piping bag or a zip-top bag with a corner snipped off for easy filling
Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into a donut comes out clean
Remove from the oven and let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely
Optionally, you can glaze the cooled donuts with a gluten-free vanilla glaze and sprinkle with gluten-free sprinkles
