Ingredients:
- 1/4 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1/4 cup buttermilk
- 1/2 teaspoon vanilla extract
- 1 egg yolk
- 2 tablespoons dark chocolate chips
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with two cupcake liners
In a small mixing bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt
In another bowl, whisk together the granulated sugar, melted unsalted butter, buttermilk, vanilla extract, and egg yolk until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated
Be careful not to overmix
Fold in the dark chocolate chips into the batter
Divide the batter equally between the two cupcake liners
Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can optionally frost or decorate the cupcakes as desired
