Ingredients:
- 1 butternut squash about 2 pounds, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 ounces macaroni pasta
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cayenne pepper optional
- 1/2 cup breadcrumbs
- Fresh parsley for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Use olive oil, salt, and pepper to coat diced butternut squash
Spread it out on a baking sheet
For 25 to 30 minutes, or until soft, roast
Follow the directions on the box to cook the macaroni until it is al dente
Remove the water and set it aside
Melt the butter in a saucepan over medium-low heat
Add the flour and stir it in
Cook for one to two minutes, until the mixture turns a light brown color
Gradually whisk in the milk while stirring all the time until the mixture is smooth and thick
Add the grated Parmesan cheese, nutmeg, cayenne pepper, and shredded cheddar cheese
Mix the ingredients until the cheese melts and blends
Blend or use an immersion blender to blend the roasted butternut squash into the cheese sauce until it is smooth
In a baking dish, mix the cooked macaroni with the cheese sauce made from butternut squash
Cover it with breadcrumbs
For twenty to twenty-five minutes, or until golden brown and bubbly
Before serving, sprinkle with fresh parsley
