Ingredients:
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts or pecans optional
- 1/4 cup raisins or dried cranberries optional
Instructions:
Set the oven to 350F 175C and heat it up
In order to make muffins, grease or line a muffin tin
Grate the carrots and mix them with all-purpose flour, almond flour, coconut sugar, maple syrup, melted coconut oil, and applesauce that hasnt been sweetened
Mix everything together well
To the mix, add salt, baking soda, cinnamon, ginger, nutmeg, and baking powder
Combine everything well by stirring
If you want to use them, mix in chopped nuts, raisins, or dried cranberries
Fill up each muffin tin about two thirds of the way to the top with batter
After the oven is hot, bake it for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean
Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way through
You can eat these vegan spiced carrot muffins for breakfast or as a tasty snack
