Lemon Rosemary Chicken

This flavorful, nutritious, and Whole30-compliant Paleo Lemon Rosemary Chicken is loaded with goodness. The aromatic rosemary and zesty lemon combine to make the ideal marinade that gives the chicken a juicy, fragrant appearance. This recipe is very simple to prepare and is great for a casual weekend BBQ or a quick weeknight dinner.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste

Instructions:

In a bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, and chopped rosemary

Season the chicken breasts with salt and pepper

Place the chicken breasts in a resealable plastic bag and pour the lemon rosemary marinade over them

Seal the bag and refrigerate for at least 30 minutes, or overnight for best results

Preheat your grill or grill pan to medium-high heat

Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has grill marks

Serve hot, garnished with additional rosemary and lemon slices if desired
